It's important to find small pockets of joy and contentment where we can. I've always found solace in cooking. Perhaps it is because learning to curate a meal was a seed my grandmother planted so many moons ago, and one I will be forever grateful for. Maybe the peace I find in my, oh so messy, kitchen stems from my desire to purposefully harness my creativity. Or maybe it's because I appreciate the individuality of each ingredient and how, when combined, the unique personality of every food invited to the meal works harmoniously with every other to create something divine, wholesome. Something so nourishing.
If we really consider it, cooking is simply teamwork. It reminds us that when combined, our unique traits create something bigger, better - and yummier. What could be more joyful than that?
...Oh, I know. This beet soup I just made.
(If you aren't keen on beets, I urge you to dismiss your disdain and read on. Humor me?)
When the world starts to spin a little too fast, it's easy to let the illusive concept of self-care slip away into the cosmos. But, self-care doesn't have to be illusive, or inaccessible, or even complicated. It can be as simple as a mishmash of veg (or, as my niece and nephew call them, "grow foods") with a dusting of salt and pepper.
Beet Soup Ingredients:
Coconut oil
1 Yellow onion
1 Clove garlic
1 Japanese sweet potato
1 Large beet
3 C Vegetable broth
2 T Coconut cream
4 T Raw ginger
Salt & pepper
Fresh parsley
Walnuts (optional)
How To:
Sauté onion & garlic in coconut oil, once browned add peeled & diced Japanese sweet potato, cook until soft (medium heat)
Once soft, use an immersion blender to combine onion, garlic and potato, creating a smooth consistency
Peel and dice 1 large beet, steam in about 3 - 4 inches of water at medium heat for approximately 20 minutes, or until soft
Combine steamed beet cubes & raw ginger in food processor, add broth and process until creamy
Combine all ingredients in a large pot and stir, add more broth depending on thickness preference
Garnish with a dollop of coconut cream, raw parsley, and chopped walnuts (if you wish)
Salt & pepper to taste
